Potato Blintzes with Sautéed Onions and Mushrooms

Topping:

  • 1 large onion
  • 3 cups of fresh mushrooms
  • 1 TS olive oil
  • 1 ts salt
  • 1 ts black pepper
  • 1 TS garlic salt (or fresh garlic)
  • Garnish: fresh parsley

1 Package of Golden potato blintzes. Slice onion and mushrooms. In a medium-sized frying pan, heat oil, salt, pepper and garlic. Add onions. Sautee onions until soft; add mushrooms and stir.

Pour on top of blintzes. Add parsley for garnish.
