Ingredients
- 4 to 6 Golden Potato & Onion Pierogies from Old Fashioned Kitchen
- 1 tablespoon butter or olive oil
Sauce Ingredients:
- 1 tablespoon olive oil, divided
- 1/2 lb. beef strips, such as sirloin or beef tenderloin
- 1/4 medium onion, sliced
- 3 oz. mushrooms, cleaned and sliced
- 1 garlic clove, minced
- 1 tablespoon all-purpose flour
- 1/3 cup beef broth
- 1/3 cup sour cream
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon Dijon mustard
- Salt and pepper, to taste
- Fresh chopped parsley, for garnish
Directions
- Bring a medium pot of water to a boil.
- Cook the pierogies according to package directions, then strain.
- Add pierogies to a medium skillet with olive oil or butter and brown lightly. Set aside.
- In the same skillet, cook the beef with 1 teaspoon olive oil until browned. Set aside.
- Add mushrooms and onions to the skillet. Sauté for about 5 minutes, or until softened.
- Add garlic and cook for another 30 seconds.
- Sprinkle flour over the sautéed vegetables and stir to coat. Cook for 1 minute.
- Gradually whisk in beef broth, stirring until the sauce thickens.
- Stir in Worcestershire sauce and Dijon mustard.
- Reduce heat to low and stir in sour cream.
- Add the beef back to the skillet and simmer for 2 to 3 minutes.
- Add the pierogies and season with salt and pepper to taste.
- Garnish with fresh chopped parsley and serve warm.
