Potato & Onion Pierogie Stroganoff

Ingredients

  • 4 to 6 Golden Potato & Onion Pierogies from Old Fashioned Kitchen
  • 1 tablespoon butter or olive oil

Sauce Ingredients:

  • 1 tablespoon olive oil, divided
  • 1/2 lb. beef strips, such as sirloin or beef tenderloin
  • 1/4 medium onion, sliced
  • 3 oz. mushrooms, cleaned and sliced
  • 1 garlic clove, minced
  • 1 tablespoon all-purpose flour
  • 1/3 cup beef broth
  • 1/3 cup sour cream
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • Fresh chopped parsley, for garnish

Directions

  1. Bring a medium pot of water to a boil.
  2. Cook the pierogies according to package directions, then strain.
  3. Add pierogies to a medium skillet with olive oil or butter and brown lightly. Set aside.
  4. In the same skillet, cook the beef with 1 teaspoon olive oil until browned. Set aside.
  5. Add mushrooms and onions to the skillet. Sauté for about 5 minutes, or until softened.
  6. Add garlic and cook for another 30 seconds.
  7. Sprinkle flour over the sautéed vegetables and stir to coat. Cook for 1 minute.
  8. Gradually whisk in beef broth, stirring until the sauce thickens.
  9. Stir in Worcestershire sauce and Dijon mustard.
  10. Reduce heat to low and stir in sour cream.
  11. Add the beef back to the skillet and simmer for 2 to 3 minutes.
  12. Add the pierogies and season with salt and pepper to taste.
  13. Garnish with fresh chopped parsley and serve warm.
