This delicious dessert was shared by Chef Gabe Rosado.
Ingredients:
- Old Fashioned Kitchen Plain Crepe Shells
- 1 1/3 cup Heavy Whipping Cream
- 1/2 cup Powdered Sugar
- 2 – 8oz. Mascarpone Cheese
- 1 1/2 cup Lemon Curd
- Fabbri Amerena Cherries (wild Italian cherries in syrup)
Lemon Mascarpone Cream Directions:
- Whip heavy cream and sugar in a large mixing bowl until stiff peaks form.
- In a separate bowl, mix mascarpone cheese and lemon curd until blended
- Fold whipped cream into cheese and curd mixture
Crispy Crepe Shells Directions:
- Line sheet pan with Parchment paper and spray with nonstick spray
- Bake in a convection oven at 375 for 20-25 minutes or until golden brown
- Rest crepes shells and allow to cool and crisp
Assemble Directions:
- Layer Crepe Crisps with Lemon Mascarpone Cream and one single Amarena cherry, and repeat 3-4 times
- Top with fruit garnish of choice and Amarena cherry syrup
