Ingredients:
- 1 package Golden Potato Blintzes (frozen)
- butter
- 3 eggs
- 1 cup sour cream
- 3/4 cup (3 oz.) shredded sharp cheddar cheese
- 1/4 cup light cream
- 4 scallions, cut in 1″ pieces
- 2 tablespoons butter, melted
- Parsley (to taste)
Directions:
Preheat oven to 325º. Butter a 10 x 6 x 2″ baking dish. Arrange blintzes in one layer. In blender, combine the eggs, sour cream, chees, cream, and scallions; whirl for 1 minute; pour over blintzes. Bake for 1 hour, or until puffy and golden. Garnish with parsley. Enjoy!
