Golden Potato Souffle

Ingredients:

  • 1 package Golden Potato Blintzes (frozen)
  • butter
  • 3 eggs
  • 1 cup sour cream
  • 3/4 cup (3 oz.) shredded sharp cheddar cheese
  • 1/4 cup light cream
  • 4 scallions, cut in 1″ pieces
  • 2 tablespoons butter, melted
  • Parsley (to taste)

Directions:

Preheat oven to 325º. Butter a 10 x 6 x 2″ baking dish. Arrange blintzes in one layer. In blender, combine the eggs, sour cream, chees, cream, and scallions; whirl for 1 minute; pour over blintzes. Bake for 1 hour, or until puffy and golden. Garnish with parsley. Enjoy!
